The ACE Bakery Story: Our Artisan Baking Tradition
From Humble Beginnings to Our Artisan Excellence
In the quaint bakehouse nestled in Caledon, Ontario, founders Linda Haynes and Martin Connell embarked on a journey of artisanal discovery, creating unparalleled bread and baguettes. With a dedication to simplicity and authenticity, they utilized simple ingredients, traditional starter doughs, and the timeless methods of long fermentation and stone baking. Their labor of love quickly became a beloved treasure among friends and family, sparking the inception of ACE Bakery in 1993 at the vibrant corner of King & Spadina.
The Rise of our Artisan Legacy
As the allure of ACE Bakery’s artisan bread reached new heights, Linda and Martin seized the opportunity to expand their vision. Establishing a state-of-the-art bakery at Keele & Lawrence, north of Toronto, they ensured the capacity to share their creations more broadly. This pivotal move enabled ACE Bakery to supply its meticulously crafted bread to restaurants and grocers not just within the city, but eventually, across North America, marking a new era of artisanal excellence.
Crafting Uncompromisingly Great Bread
Today, ACE Bakery’s reputation as a purveyor of fine breads extends across Canada and the USA, gracing dining tables and restaurant menus alike. Our range now encompasses not just our signature baguettes and specialty loaves, but also gourmet burger buns and artisan sandwich rolls. Despite our growth, our commitment to our artisanal method — the heart of our original bakehouse — remains unchanged, ensuring each product carries the legacy of uncompromising quality.
