Ingredients:
- 4 slices ACE Bakery® Pane Rustico
- 1 cup herbed ricotta (ricotta, 1/4 C parmesan cheese, 1/4 C fresh basil, salt, pepper)
- 1 cup roasted cherry tomatoes
- 1 cup cooked Italian sausage, crumbled
- 1 ½ cups shredded mozzarella
- Butter. for spreading
- salt and pepper, to taste
- 1 tbsp olive oil
- 3-4 sprigs of fresh thyme
Instructions:
- Roast Cherry Tomatoes: add cherry tomatoes to a roasting dish, toss with olive oil, fresh thyme sprigs, salt, and pepper, then roast in a 400°F oven for 20-25 minutes.
- Prepare Herbed Ricotta: Mix ricotta, Parmesan, basil, salt, and pepper in a bowl. Set aside.
- Cook Italian Sausage: Brown Italian sausage in a skillet over medium heat until cooked through. Set aside.
- Assemble Sandwiches: Lay out 4 slices of Italian bread. Spread herbed ricotta generously on each slice. Top with roasted tomatoes, cooked Italian sausage, and mozzarella. Place remaining bread slices on top.
- Heat skillet or griddle over medium heat. Spread butter on outer sides of each sandwich. Cook sandwiches until golden brown and cheese is melted, about 3-4 minutes per side.
- Remove from skillet, let cool for a minute, then slice in half and serve hot.
