Grilled Chicken Caesar Club Sandwich on ACE Focaccia Roll

Some sandwiches are content to be lunch. This one has bigger ambitions. Built on a toasted ACE Bakery focaccia roll — golden and crisp at the edges, soft and pillowy within — it layers juicy grilled chicken, crispy bacon, cool romaine, ripe tomato, and creamy avocado, all tied together with a Caesar sauce bold enough to hold it all together. A little Greek yogurt keeps it bright, a hit of lemon keeps it honest, and the Parmesan and Dijon make sure it stays unmistakably Caesar.
- 2-3 ACE Bakery® focaccia rolls, cut in half horizontally
- 2 boneless, skinless chicken breasts
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp butter, melted
- 1 slice of pepper jack or white cheddar cheese
- 1/3 cup mayo
- 2 tbsp Greek yogurt (or additional mayo)
- 1–2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 small garlic clove, finely grated
- 2–3 tbsp grated Parmesan
- Anchovy paste (optional)
- Black pepper, to taste
- 6–8 slices crispy bacon
- Romaine lettuce
- 1–2 tomatoes, sliced
- 1 small red onion, sliced
- Avocado slices
1. Season chicken with salt, pepper, and garlic powder. Grill or pan-sear over medium-high heat for 5–6 minutes per side, until golden and cooked through. If using cheese, add a slice during the last few minutes of cooking and continue until just melted.
2.Slice the ACE Bakery® focaccia roll in half horizontally. Brush each side with with butter. Toast cut sides in a skillet, oven, or grill until lightly golden and crisp on the edges.
3. Whisk together mayo, Greek yogurt, lemon juice, Dijon, grated
garlic, Parmesan, and black pepper until creamy and well combined. Adjust seasoning to taste.
4.Cook bacon until crisp. Slice tomatoes, wash romaine, and shave extra Parmesan.
5. On the bottom half of the focaccia, spread Caesar sauce, then
layer with lettuce, tomato, and crispy bacon. On the top half, spread another layer of Caesar sauce, then add sliced grilled chicken, Parmesan, and lettuce. Slice in half and serve immediately while everything is crisp, creamy, and warm.
