- 3 tbsp unsalted butter, softened
- 1 tbsp finely chopped chives or parsley
- ½ tsp lemon zest
- Pinch flaky salt
Egg-in-a-Hole
- 4 slices ACE Bakery® Sourdough Bistro Bread
- 2 large eggs
- 1 tbsp olive oil
- 1 tbsp butter
- Kosher salt and freshly cracked black pepper
For Serving (Optional)
- Crispy bacon
- Sliced avocado
- Fresh chives or microgreens
- Salt and pepper, to taste
InstructionsMake the herby butter: In a small bowl, mix the butter, herbs, lemon zest, and flaky salt. Set aside.Use a heart-shaped cookie cutter (or a small knife) to cut a heart from the center of each slice of bread. Save the cut-outs for toasting.Heat butter in a large skillet over medium heat. Add the bread slices and cut-outs and toast until golden on one side.Flip the bread, crack an egg into each cut-out, and season with salt and pepper. Cover the pan and cook 2–3 minutes, until the whites are set and the yolks are still jammy.Remove from heat and spread the warm toast with herby butter. Serve with bacon and sliced avocado on the side and season with salt and pepper.
