Ingredients:
5 slices of Ace Granary Loaf Bread
5 large eggs
Salt, to taste
1-2 ripe avocados
Hot honey, optional
Instructions:
- Prepare the Bread: Toast the 5 slices of Ace Granary Loaf Bread until golden brown and crispy.
- Make the Cloud Eggs: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper. Separate the egg whites from the yolks, being careful to keep the yolks intact. In a clean mixing bowl, whip the egg whites with a pinch of salt until stiff peaks form. Spoon the whipped egg whites onto the prepared baking sheet, creating 5 small mounds. Make a small indent in the center of each mound for the yolks. Bake for 3 min and then remove from oven and gently place one yolk into each indent. Bake for additional 3 minutes until the egg whites are set and slightly golden.
- Prepare the Avocado: While the cloud eggs are baking, mash the avocado in a bowl with a pinch of salt until smooth.
- Assemble the Toast: Spread a generous amount of mashed avocado onto each slice of toasted Ace Granary Loaf Bread. Top each slice with a cloud egg. Sprinkle a little more salt and pepper and a drizzle of hot honey over the top if desired, serve immediately.
