Ingredients
- 4 ACE® Cheddar Ciabatta Bun
 
- 4 cream cheese, softened
 
- 2 chopped fresh basil
 
- 1 garlic powder
 
- 1 rosemary leaves
 
- 1 thyme leaves
 
- 1/2 salt
 
- 1/4 cup olive oil
 
- 1 eggplant (cut into 1” slices)
 
- 1 zucchini (cut into 1” slices)
 
- 2 red bell peppers (cut into wedges)
 
- 1 red onion (cut into 1” slices)
 
- 1 cup arugula leaves (rinsed and drained)
 
Directions
- Mix cream cheese, basil, garlic powder, rosemary, thyme and salt in a bowl. Set aside.
 
- Brush vegetables lightly with olive oil
 
- Grill vegetables over medium-high heat for 5 to 10 minutes or until vegetables are tender
 
- Place buns on the grill for 30 seconds per side or until lightly toasted
 
- Evenly spread cream cheese mixture on each side of the bread
 
- Layer the bell peppers, zucchini, eggplant, red onion and arugula
 
- Cut sandwiches in half, serve immediately
