Ingredients
Quick Pickles
- 1 cup julienned carrots
- 1 cup julienned daikon radish
- ½ cup rice vinegar
- ½ cup warm water
- 2 tbsp sugar
- 1 tsp kosher salt
Pork Burgers
- 1 lb ground pork
- 2 cloves garlic, finely grated
- 1 tbsp fish sauce
- 1 tsp soy sauce
- 1 tsp brown sugar
- ½ tsp black pepper
- 2 green onions, finely sliced
Sauce
- ½ cup mayo
- 1–2 tbsp sriracha
- 1 tsp honey
- 1 tsp lime juice
For Serving
- 4 ACE Bakery® burger buns, toasted
- ½ cucumber, thinly sliced
- Fresh cilantro
- Jalapeño slices (optional, but encouraged)
Instructions
1. Make the pickles: In a bowl, whisk together rice vinegar, warm water, sugar, and salt until dissolved. Add carrots and daikon and let sit for at least 20–30 minutes. Drain before using.
2. Prep the burgers: In a bowl, combine pork, garlic, fish sauce, soy sauce, brown sugar, pepper, and green onions. Gently mix, then divide into 2–3 oz portions and loosely roll into balls.
3. On the stovetop or grill, heat a lightly oiled skillet or griddle over medium-high heat. Place the pork onto the hot surface and smash into a thin patty (about 4 inches wide). Cook undisturbed for 2 minutes, until crispy at the edges. Flip and cook another minute, until cooked through.
4. Make the sauce: Stir together mayo, sriracha, honey, and lime juice. Taste and adjust if needed.
5. Assemble: Spread sauce on both sides of the toasted buns. Add the pork (go double if you want), then pile high with pickled veggies, cucumber, cilantro, and jalapeños. Serve immediately. YUM!
